Sausage and Oyster Stuffing

  • 1 pound pork sausage
  • 16 ounces unseasoned dry bread stuffing mix
  • 2 (8 ounce) cans oyster pieces, liquid reserved
  • 2 cups chopped celery
  • 1 onion, chopped
  • 4 tablespoons butter, melted
  • 1 1/2 cups turkey broth*
  • Salt and pepper to taste

Place sausage in a large, deep skillet. Cook and crumble over medium high heat until evenly brown.

In a large bowl combine the dry bread stuffing with the sausage and pan juices. Stir in the oyster pieces and liquid, chopped celery, chopped onion, and butter.

Add the broth/liquid a little at a time until the dressing is moist but not soggy. Season to taste with salt, pepper. Refrigerate until cold and then stuff the turkey.

*Note that chicken broth, beer or water may be substituted for the turkey broth.

Cranberry Ginger Chutney

  • 1 1/2 cups sugar
  • 3/4 cup apple cider or apple juice
  • 1/3 cup apple cider vinegar
  • 12 oz. cranberries
  • 1 large pear or apple, peeled and diced
  • 1/4 cup chopped fresh ginger
  • 1/4 tsp. red pepper flakes

Dissolve sugar in saucepan with apple cider. Add remaining ingredients and cook for 1/2 hour until thickened. Add salt and pepper to taste!

Great with turkey, chicken or meats.

Old-Fashioned Jam Cake Recipe

  • 1/2 lb. butter
  • 3 C. flour
  • 1 t. allspice
  • 2 C. sugar
  • 1/2 t. salt
  • 1 C. buttermilk
  • 4 whole eggs
  • 1 t. cinnamon
  • 1 t. soda
  • 2 egg yolks
  • 1 t. ground cloves
  • 2 C. blackberry jam

Cream butter and sugar until fluffy. Add eggs and yolks; beat until light. Sift flour with dry ingredients. Add flour mixture alternately with buttermilk; add jam. Bake in 3 greased and floured 8-inch pans for 35 minutes at 350° F.

Icing:

  • 2 egg whites
  • 12 oz. butter
  • 2 C. sugar
  • 1 C. evaporated milk

Easy, Easy Yams

  • I can or 4 fresh yams
  • ¼ cup butter
  • ½ bag miniature marshmallows
  • ½ cup orange juice or 1 orange sliced
  • ¼ cup brown sugar

Drain yams and discard liquid. Arrange in a baking dish. Pour orange juice over yams and sprinkle liberally with brown sugar. Dot with butter. Sprinkle with marshmallows, if desired. Place orange slices on top.

Bake for 30 minutes at 350 degrees or in any oven temperature (for example, along with the turkey) until marshmallows melt and liquid is bubbly.
